I know… you’re probably wondering why I’m posting a recipe for Cucumbers and Onions Refrigerator pickles on a Web Designer Blog. Mostly, it’s just for my own benefit, so that it’s easier to share with my friends. But I thought I might as well post it for everyone to enjoy as well. Who doesn’t like cucumbers and onions! This is such a simple recipe and so exceptionally good. My entire family loves this recipe! It’s our favorite! And we’ve been making it for years to share with family & friends. Super easy to make!!
You need about 8 – 10 small Cucumbers, and 2 sweet vidalia onion.
And you’ll want to peel them with a vegi peeler, and then score them with a fork.
Next, slice them into thin slices and set aside while you make the “dressing”.
4 -6 cucumbers, pealed and thinly sliced
1 vidalia onion, thinly sliced
2 cup sugar
2⁄3 cup oil
2 cup vinegar
2 cup water
1 teaspoon salt
1⁄2 teaspoon pepper
No cooking involved! Just mix ingredients, refrigerate for 24 hours and enjoy. I’m guessing that they would stay fresh in the fridge for at least 3 weeks. But honestly, our jars never make it that long! They are always gone before then!! Enjoy!! And let me know if you try this recipe and what you think!!
